It is made by adding a kombucha culture to a batch of sweet tea and allowing it to ferment at room temperature. Fermenting the sweet tea transforms it into a massively flavorful, tart, effervescent, and healthy beverage that we know as kombucha. The culture used to ferment kombucha is called a S. The resulting beverage is packed with probiotics, vitamins, enzymes, plus the added health benefits from the tea.

While the SCOBY is most notably known as the cellulose disk that grows on the surface of the brew, the term refers to all of the living microbes throughout the liquid as well. When you purchase a SCOBY, you want to make sure that it comes with plenty of mature liquid kombucha, called starter tea.

The starter tea lowers the initial pH of your brew and adds a high concentration of microbes to start the fermentation process. Our cultures come with 12 fl oz of mature starter tea which is the perfect ratio to brew a strong 1-gallon batch. We take great care to ensure our kombucha starter cultures are safe, consistent, and the highest quality.

Kombucha Tea does contain small amounts of caffeine, as it is made from tea. In my guides I teach techniques to dramatically reduce the caffeine content to nearly zero. Again, this varies based on Kombucha recipe and ferment time, but most Kombucha Tea will contain less than a teaspoon of table sugar per glass, and it is possible to ferment longer with the Kombucha culture until the Kombucha Tea is essentially sugar free.

Why waste all your time and effort brewing Kombucha if you end up having to throw it away and start with a new culture? Nearly any kind of tea or herbal infusion can brew a successful Kombucha batch, but for long term health of the kombucha culture, a mix of green and black tea does best.
